Xiamen is a well-known tourist port city in the Southeast coast of China. It is one of the Cleanest Cities of China, the Garden Cities of China, the National Environmental Protection Model Cities, and the best sightseeing cities in China. Not only being wealthy with travel resources, Xiamen has also temperate weather, fast and convenient transport and communication, and complete travel establishments. All makes Xiamen one of the most suitable cities for investors and tourists in China.

Xiamen was founded in 1394 at the beginning of the Ming dynasty as a center of defense against coastal pirates. Its prosperity was e to its deepwater sheltered harbor, that supplanted nearby Quanzhou, the port that had been the center of the maritime trade with the Indies.

Fujian cuisine, also called Min Cai for short, holds an important position in China's culinary art. Fujian's economy and culture began flourishing after the Southern Song Dynasty (1127-1279). During the middle Qing Dynasty around 18th century, famous Fujian officials and literati promoted the Fujian cuisine so it graally spread to other parts of China. Fujian cuisine comprises three branches -- Fuzhou, South Fujian and West Fujian. There are slight differences among them. Fuzhou dishes, quite popular in eastern, central and northern Fujian Province, are more fresh, delicious, and less salty, sweet, and sour; South Fujian dishes, popular in Xiamen, Quanzhou, Zhangzhou and the golden triangle of South Fujian, are sweet and hot and use hot sauces, custard, and orange juice as flavorings; West Fujian dishes are salty and hot, prevailing in Hakka region with strong local flavor. As Fujian people emigrate overseas, their cuisine become popular in Taiwan and abroad. Generally speaking, Fujian dishes are slightly sweet and sour, and less salty, and often use the red distiller's grain for flavoring. Fujian cuisine is characterized by the following four aspects: (1)Ingredients of seafood and mountain delicacies: Fujian cuisine emphasizes seafood and mountain delicacies. Fujian Province has a favorable geographical location with mountains in its north and sea to its south. Many mountain delicacies such as mushroom, bamboo shoots and tremella are often found here. The coastal area proces 167 varieties of fish and 90 kinds of turtles and shellfish. It also proces edible bird's nest, cuttlefish, and sturgeon. These special procts are all used in Fujian cuisine. The local people are good at cooking seafood, featuring in methods of stewing, boiling, braising, quick-boiling, and steaming, etc. (2) Fine slicing techniques: Fujian cuisine stresses on fine slicing techniques so much that it is reputed as sliced ingredients are as thin as paper and shredded as slim as hairs. Everything sliced serves its original aroma. Fine slicing techniques may better show the aroma and texture of food. Cutting is important in Fujian cuisine. Most dishes are made of seafood, and if the seafood is not cut well, the dishes will fail to have their true flavor. (3) Various soup and broth: The most characteristic aspect of Fujian cuisine is that its dishes are served in soup. (4) Exquisite culinary art: Fujian dishes are tasty because of their emphasis on a series of delicate procession: selecting ingredients, mixing flavors, timing the cooking and controlling the heat. When a dish is less salty, it tastes more delicious. Sweetness makes a dish tastier, while sourness helps remove the seafood smell. Typical dishes are Buddha-jumping-over-the-wall, flaked spiral shell lightly pickled in rice liquor, litchi fish, and mussels quick-boiled in chicken broth, of which Buddha-jumping-over-the-wall is the most famous; the name implies the dish is so delicious that even the Buddha would jump over a wall to have a taste once he smelled it. A mixture of seafood, chicken, ck, and pork is put into a rice-wine jar and simmered over a low fire. Sea mussel quick-boiled in chicken soup is another Fujian delicacy.

ANNOUNCER: Millions of Americans will celebrate Christmas on December Twenty-Fifth. It is the most widely celebrated religious holiday in the United States. For the past few weeks, Americans have been preparing for Christmas. I'm Bob Doughty. Shirley Griffith and Ray Freeman tell us about American Christmas traditions and music on the VOA Special English program, THIS IS AMERICA.

VOICE ONE:

People have been buying gifts to give to family members and friends. They have been filling homes and stores with evergreen trees and bright, colored lights. They have been going to parties and preparing special Christmas foods. Many people think Christmas is the most wonderful time of the year. Johnny Mathis thinks so, too.

VOICE TWO:

Many Christians will go to church the night before the holiday or on Christmas Day. They will celebrate Christmas as the birthday of Jesus Christ. Christian ministers will speak about the need for peace and understanding in the world. This is the spiritual message of Christmas. Church services will include traditional religious songs for the holiday.

One of the most popular is this one, "Silent Night." Here it is sung by Joan Baez.

Many other Americans will celebrate Christmas as an important, but non-religious, holiday. To all, however, it is a special day of family, food, and exchanging gifts.

Christmas is probably the most special day of the year for children. One thing that makes it special is the popular tradition of Santa Claus.

Young children believe that Santa Claus is a fat, kind, old man in a red suit with white fur. They believe that -- on the night before Christmas -- he travels through the air in a sleigh pulled by reindeer. He enters each house from the top by sliding down the hole in the fireplace. He leaves gifts for the children under the Christmas tree.

Americans spend a lot of time and money buying Christmas presents. The average American family spends about eight-hundred dollars. Stores and shopping centers are crowded at this time of year. More than twenty percent of all goods sold ring the year are sold ring the weeks before Christmas. This is good for stores and for the American economy.

Some people object to all this spending. They say it is not the real meaning of Christmas. So, they celebrate in other ways. For example, they make Christmas presents, instead of buying them. Or they volunteer to help serve meals to people who have no homes. Or they give money to organizations that help poor people in the United States and around the world.

VOICE TWO:

Home and family are the center of the Christmas holiday. For many people, the most enjoyable tradition is buying a Christmas tree and decorating it with lights and beautiful objects. On Christmas Eve or Christmas morning, people gather around the tree to open their presents.

Another important Christmas tradition involves food. Families prepare many kinds of holiday foods, especially sweets. They eat these foods on the night before Christmas and on Christmas day.

For many people, Christmas means traveling long distances to be with their families. Peabo Bryson and Roberta Flack sing about this holiday tradition.

Another Christmas tradition is to go "caroling." A group of people walks along the street. At each house, they stop and sing a Christmas song, called a carol. Student groups also sing carols at schools and shopping centers. Let us listen to the choir of Trinity Church in Boston sing "Carol of the Bells."

Not everyone in the United States celebrates Christmas. Members of the Jewish and Muslim religions, for example, generally do not. Jewish people celebrate the holiday of Hanukkah. And some black Americans observe another holiday, Kwanzaa. Yet many Americans do take part in some of the traditional performances of the season. One of the most popular is a story told in dance: "The Nutcracker" ballet. The music was written by Russian composer Peter Ilich Tchaikovsky in eighteen ninety-one.

VOICE ONE:

The ballet is about a young girl named Clara. Clara is celebrating Christmas with her family and friends. One of her Christmas presents is a little device to open nuts -- a nutcracker. It is shaped like a toy soldier. She dreams that the nutcracker comes to life as a good-looking prince.

Professional dance groups in many American cities perform the ballet at this time of year. They often use students from local ballet schools to dance the part of Clara and the other children in the story. This gives parents a chance to see their children perform.

We leave you with "The Waltz of the Flowers" from "The Nutcracker." It is played by the Philadelphia Orchestra, led by Eugene Ormandy.

一、廣州人嗜好飲茶。早上見面打招呼就是問「飲佐茶未」,以此作為問候早安的代名詞,可見對飲茶的喜愛。飲茶是廣州人的一個生活習慣,也是「食在廣州」的一大特色。

廣州人所說的飲茶,實際上指的是上茶樓飲茶,不僅飲茶,還要吃點心,被視作一種交際的方式。廣州的茶樓與茶館的概念也不盡相同。它不但供應茶水還供應點心,而且建築規模宏大,富麗堂皇,是茶館所不能比擬的。因此,廣州人聚朋會友,洽談生意,業余消遣,都樂於上茶樓。一壺濃茶幾件美點,三三兩兩聚在一起,邊吃邊談,既填飽了肚子、聯絡了感情,又交流了信息,甚至談成了一樁生意,實在是一件愜意的事情。正因為如此,廣州人把飲茶又稱「嘆茶」。「嘆」是廣州的俗語,為享受之意。這也正是廣州茶樓業歷經百年而不衰的一個重要原因。在廣州的老字型大小飲食店中,有相當一部分就是當年的茶樓。

廣州人飲茶並無什麼禮儀上的講究。唯獨在主人給客人斟茶時,客人要用食指和中指輕叩桌面,以致謝意。據說這一習俗,來源於乾隆下江南的典故。相傳乾隆皇帝到江南視察時,曾微服私訪。有一次,來到一家茶館,興之所至,竟給隨行的仆從斟起茶來。按皇宮規矩,仆從是要跪受的。但為了不暴露乾隆的身份,仆從靈機一動,將食指和中指彎曲,做成屈膝的姿勢,輕叩桌面,以代替下跪。後來,這個消息傳開,便逐漸演化成了飲茶時的一種禮儀。這種風俗至今在嶺南及東南亞的華僑中依然十分流行。

二、潮汕功夫茶是廣東潮汕地區獨特的飲茶習慣。「功夫茶」對茶具、茶葉、水質、沏茶、斟茶、飲茶都十分講究。功夫茶壺很小,只有拳頭那麼大,薄胎瓷,半透明,隱約能見壺內茶葉。杯子則只有半個乒乓球大小。茶葉選用色香味俱全的烏龍茶,以半發酵的為最佳。放茶葉要把壺里塞滿,並用手指壓實,據說壓得越實茶越醇。水最好是要經過沉澱的,沏茶時將剛燒沸的水馬上灌進壺里,開頭一兩次要倒掉,這主要是出於衛生的考慮。斟茶時,幾個茶杯放在一起,不能斟滿了這杯再斟那杯,而要輪流不停地來回斟,以免出現前濃後淡的情況。飲時是用舌頭舔著慢慢地品,一邊品著茶一邊談天說地,這叫功夫。功夫茶茶汁濃,鹼性大,剛飲幾杯時,會微感苦澀,但飲到後來,會愈飲愈覺苦香甜潤,使人神清氣爽,特別是大宴後下油最好。

三、廣州之所以被稱為「花城」,不單是因為廣州氣候溫和、四季如春、鮮花常開 ,更由於廣州每年春節前都舉行迎春花市。這種傾城人逛花市的習俗,全國惟有廣州所獨有。迎春花市是由古代花市、夜花市逐漸發展形規模的。

早在兩漢時,廣州人便有愛花的癖好。陸賈出使南越國時,已說嶺南人「彩縷穿花」。因廣州人愛花,也就出現了以種花、賣花為業的人。

逛花街

花市舉行的日期,固定在春節前三天,即從年廿八開始,到除夕之夜達到高潮,正月初一清晨兩點鍾結束。而且有一個不成文的規矩:到除夕午夜時分,花農必將售不出去的花砸個稀爛。這種習俗一直保留至今。現在,廣州迎春花市的數量越來越多,規模越辦越大。市內各區均有花市:越秀區在教育路:東山區在濱江路;荔灣區在多寶路;海珠區在江南大道。另外,越秀公園、烈士陵園、海幢公園、流花湖、荔灣湖等大小公園,無不在春節前後舉辦形式多樣的花展、花卉,成為廣州花市的一個組成部分。而教育路花市則成為廣州花市的中心。每個花市搭起綵樓,張燈結綵,在馬路中央架起長長的花棚,一層一層擺滿各種花果。廣州人好講意頭,認為春節逛花街,買支靚花,來年便能行個「好運」。當然,逛花街不只是為了買花,更多的是為了賞花。花市集中了春夏秋冬四季百多種花果。

四、每年陰歷(農歷)五月初五是我國人民的傳統節日端午節。端午原名「端五」,端是初始的意思。亦叫重五、端陽。因端午正是夏季之中,太陽處在正陽的位置,所以稱端陽,還叫天中節。

賽龍舟

端午節,民間有吃粽子和賽龍舟、洗龍舟水等習俗。廣州端午賽龍舟已有一千多年的歷史。明代以來,人們多數在珠江河海珠島對開的海面進行。但那時的龍舟比今天的高大得多,樣式也復雜、美觀,有十幾丈長,六七尺高,龍船上還有台閣,一隻船上有近百人,實質是以藝術性為主。現在,賽龍舟已成了群眾性的體育競賽運動了。龍舟的形狀也多製成狹而長,形如獨木舟,以利船速。龍舟的槳數不等,少則六,多的有五十多對。大型龍舟一般都設旗手和鑼鼓手,鑼鼓手擊鑼打鼓統率全船,劃槳的隨鼓聲或快或慢。此外劃槳的只管劃槳,掌舵的把穩舵向。奪標進入高潮時,擊槳激起的水花能把整個船罩住,以致岸上觀看的群眾不見龍舟,只見一團團水霧在江面飛馳,甚是扣人心弦。賽龍舟奪標者可贏得整隻燒豬帶回村裡分了吃。
